In winter, the Madonie mountains have a quiet charm: roads winding through olive groves and oak trees, stone villages that retain the warmth of their ovens, shops where raw milk cheeses tell the story of life in the gentle mountains. It is the perfect day for those seeking a slower pace, authentic cuisine and a different side of Sicily away from the sea. At Liberty Palace, we organise your trip with door-to-door transfers: hop in comfortably in the morning and return in the evening with the boot smelling of bread and fennel.
Why Castelbuono
The “sweet” capital of the Madonie mountains, Castelbuono is a lively village: the Ventimiglia castle at the top, basalt streets, artisan shops and bakeries that bake manna biscuits, naturally leavened loaves and warm pastries. Here, cheesemakers produce provola, caciocavallo, tume and ricotta cheeses, which reach their full flavour in winter thanks to the low pastures and haymaking.
What makes winter special: fewer crowds, clear light for photos, artisans who have time to tell stories.
