It is the perfect day for those seeking a slower pace, authentic cuisine and a different side of Sicily away from the sea. Why Castelbuono

The “sweet” capital of the Madonie mountains, Castelbuono is a lively village: the Ventimiglia castle at the top, basalt streets, artisan shops and bakeries that bake manna biscuits, naturally leavened loaves and warm pastries. Here, cheesemakers produce provola, caciocavallo, tume and ricotta cheeses, which reach their full flavour in winter thanks to the low pastures and haymaking.

Recommended itinerary (6–8 hours from Liberty Palace)


08:45 — Departure

 Pick-up at Liberty Palace in an air-conditioned minivan (child seats available on request).

 The countryside changes colour along the motorway: get your camera ready.


10:15 — Arrival and walk through the village

 Entrance from the historic centre, slow climb to the castle (optional visit).

 Photo spots: stone portals, wrought iron signs, backlit alleys.


11:30 — Hot ovens

Stop at a historic bakery: durum wheat bread, seasonal pastries, manna biscuits.

Tip: try the warm “strappato” bread with new olive oil.


12:15 — Gourmet stop (tasting)

Small tasting in a shop: caciocavallo cheese, Madonie provola cheese, ricotta cheese and local honey. Paired with jams and a glass (optional) of local red wine.


1:15 p.m. — Lunch

Selected trattoria (we will make the reservation): pasta with fennel and sardines in a winter version, grilled meats, field vegetables. Children's menu available.


15:00 — Free time

Ceramics, handmade knives, micro-producers' wine shops. Alternatively: short nature walk on an easy trail (weather permitting).


16:00 — Return

Stop for coffee and return to the hotel around 17:30–18:00.
